WIELKANOCNE PLACKI I CIASTA Z DĘBNA

Nie po raz pierwszy będzie nam dane przekonać się, że niezwykłość świątecznych smaków kuchni góralskiej bierze się z umiejętności połączenia prostych, ogólnodostępnych składników,
umiłowania tradycji i serca gospodyń wkładanego w sporządzanie świątecznych wypieków.
Tym razem odwiedzamy Dębno - miejscowość położoną na skraju Kotliny Nowotarskiej, stanowiącą przez wiele stuleci swoistą „bramę” ku Pieninom, położoną na szlaku handlowym wiodącym na Węgry i Słowację, która 22 lutego br. obchodziła 860-lecie lokacji. Urokliwie
zlokalizowana, z pięknymi widokami na Trzy Korony i otoczona trzema Parkami Narodowymi (Gorczańskim, Pienińskim i Tatrzańskim). Była to - i nadal jest - miejscowość gospodarna i zasobna. Jeszcze przed niespełna wiekiem tutejsza olejarnia i młyn stanowiły miejsce spotkań gaździn i gazdów z Pienin, Spisza, północnej części Podhala i Gorców. Rozmowy, jakie się toczyły w oczekiwaniu na olej i mąkę, były zapewne również okazją do wymienienia się doświadczeniami kulinarnymi; szczególnie w dniach poprzedzających przygotowania do wszelkich świąt i uroczystości rodzinnych

It is not the first time that we will be able to learn that the unique quality of the holiday tastes of Highlander cuisine stem from the skilful combination of simple, generally available ingredients, the love of tradition, and the heart that the cooks put into the holiday baking.
This time we are visiting Dębno: a town situated on the edge of the Kotlina Nowotarska trough that for centuries has provided a special ‘gate’ to the Pieniny as it is situated on trade routes leading across Hungary and Slovakia. It is a town that celebrated the 860th anniversary of its charter on 22nd February this year. Picturesquely situated to allow beautiful views of Mt Trzy Korony and surrounded by three national parks (stretching over the Gorce, Pieniny and Tatra mountains respectively), it has always been an economical and wealthy place. Still less than a century ago, the local oil plant and mill provided a meeting place for the farmers and their wives from the Pieniny, Spisz, the northern ranges of the Podhale region and the Gorce mountains. The conversations while waiting for the pressed oil and ground flour must have also provided an opportunity to exchange cooking experiences, especially in the days of preparation for all religious holidays and family occasions. This is certainly just a conjecture, yet supported by the similarity of names, indications for preparation, and the appearance of many festive dishes and baked goods that today can still be found in the Highlands.
